Healing Chicken Soup Recipe

Ingredients:

  • 1 whole chicken (or 2-3 lbs of chicken thighs/drumsticks)

  • 8 cups water (or chicken broth for extra flavor)

  • 1 onion, chopped

  • 3-4 garlic cloves, minced

  • 3-4 carrots, peeled and sliced

  • 3-4 celery stalks, sliced

  • 1-2 parsnips or turnips (optional, for extra sweetness)

  • 1-2 bay leaves

  • 1 tsp dried thyme (or a few sprigs of fresh thyme)

  • 1 tsp dried rosemary (optional)

  • 1 tsp turmeric (anti-inflammatory and healing)

  • Salt and pepper to taste

  • 1 cup cooked rice, noodles, or quinoa (optional, for added heartiness)

  • Fresh parsley or dill, chopped (for garnish)

  • Lemon wedges (optional, for a bright finish)






Instructions:

  1. Prepare the Chicken:

    • If using a whole chicken, rinse and pat it dry. Place it in a large pot and cover with water or broth. If using chicken pieces, add them to the pot.

    • Bring to a boil, then reduce to a simmer. Skim off any foam or impurities that rise to the surface.

  2. Add Aromatics:

    • Add the chopped onion, minced garlic, bay leaves, thyme, rosemary, and turmeric to the pot. Simmer for about 30-40 minutes until the chicken is fully cooked and tender.

  3. Remove the Chicken:

    • Once the chicken is cooked, remove it from the pot and let it cool slightly. Shred the meat, discarding the skin and bones. Set the shredded chicken aside.

  4. Add Vegetables:

    • Add the carrots, celery, and parsnips (or turnips) to the broth. Simmer for another 15-20 minutes until the vegetables are tender.

  5. Combine and Season:

    • Return the shredded chicken to the pot. Season with salt and pepper to taste. If you’re adding rice, noodles, or quinoa, stir them in at this stage and let them warm through.

  6. Serve:

    • Ladle the soup into bowls. Garnish with fresh parsley or dill and a squeeze of lemon juice for a bright, fresh flavor.
